Sweet and Spicy Pulled Pork
Incredible recipe for a subtle sweet and spicy pulled pork. Perfect for burritos, quesadillas, sliders or in a salad!

Cut in half. You can remove the seeds for less heat

Peel, root removed and sliced
Instructions
In a small bowl mix rub ingredients together.
Place pork roast in the crock pot.
Sprinkle the spice mixture over the roast and rub in to completely coat.
Add in sliced onion and jalapeno pepper on the sides of the roast.
Pour in enchilada sauce and Dr. Pepper around the roast. Don't worry about it not being mixed. That will happen while it's cooking.
Place the lid on your slow cooker and cook on high for 3 hours.
Reduce the heat to low and cook for 5 hours.
Shred the pork and remove any large fatty pieces.
Serve!

*This can be cooked on low for 12 hours or overnight.
