So, I promised you in my last post that I was going to wow you with a super simple addition to my Ginger Cookies. I sure hope you are because these have climbed super quick up on my list of favorite cookies….like, of all time! Well, at least during the fabulous holiday seasons! The smell of these cooking alone spark that holiday spirit that I just can’t resist.
What’s better then eating one delicious cookie? Eating two at the same time and not feeling guilty about it one bit! Especially when there is a smooth and creamy cream cheese frosting sandwiched in between.
While you’ve got your cookies in the oven you can make the cream cheese frosting and then try not to snitch a spoonful or two!
These really will add a fun new treat element to your holiday feasts. The best part about these cookies is sharing them and seeing everyone’s eyes light up when they take that first bite! Truth be told…that’s my favorite part about sharing any baked good!

And here is my favorite Cream Cheese Frosting recipe…
Cream Cheese Frosting
1 pkg cream cheese, softened
1/3 cup butter, softened
1 tsp vanilla
4 cups powdered sugar
Beat cream cheese and butter until smooth. Add in vanilla and mix.
Stir in powdered sugar until desired consistency is reached. If it
ends up being too thick, add a little milk to thin it out.
To assemble cookies simply place a TBSP of frosting onto the bottom of one cookie and place another cookie (bottom side) on top of the frosting. Gently push and twist until the frosting comes right to the edges. Best stored in an airtight container in the refrigerator.
