If you were to take a look at my recipes lately, you would think my family is on a pure sugar diet! I just happen to really like to bake and 90% of the time give half of the baked goods away to friends and neighbors. Do we only eat unhealthy foods? Of course not! It’s actually been my goal for a while to try to incorporate more healthy foods into every meal.
With summer in full swing around here, I don’t want to turn on the heat to make those healthy meals though! It gets really hot here in Texas and I dread every time I even think about turning the oven or stove on.
That’s why I was excited to try out Birds Eye Steamfresh Protein Blends and Tyson Grilled & Ready Chicken Breast Fillets that I found in the freezer section of my neighborhood Walmart. Purely for the fact that you use a microwave to prepare it! No rising heat from your oven!
And that is just one of the reasons these are so great! Let’s talk about the fact that both of these products are great healthy choices. The Birds Eye Protein Sides are the perfect extra protein to add to any meal to make it more full. With 4 guys in my house, this is super important for my budget! Ha! The Tyson Grilled and Ready Chicken is 100% all natural and made with all with white meat. It has a great grilled taste without having to fuss with the grill. Both were super easy to prepare using my microwave!
You certainly could serve these side by side and it would make a pretty great meal! I had a few extra ingredients on hand so I decided to toss it all together and make a salad. The veggies have a flavorful sauce that acted like a dressing for the salad. This was soooo good and filling!
Southwestern Chicken Black Bean and Lentil Salad

Ingredients
3-4 Tyson Grilled & Ready Chicken Breast Fillets
1 bag Birds Eye Steamfresh Protein Blends Southwestern Flavor
4 large handfuls of fresh baby spinach
1 avocado, cubed
2 Roma tomatoes, cubed
1/2 cup cilantro leaves
1 medium lime
Instructions
1. Prepare Tyson Grilled & Ready Chicken Breast Fillets according to package directions.
2. Prepare Birds Eye Steamfresh Protein Blends according to package directions.
3. While those are cooking, toss together spinach and cilantro leaves together.
4. Pour veggies over spinach.
5. Place chicken over veggies.
6. Sprinkle avocado and tomato over the top.
7. Squeeze half of the lime over the top of the salad and garnish the salad with the remaining lime wedges.
8. Serve family style.
You can also serve this in a tortilla which my little boys loved! Feel free to leave the spinach leaves out or throw a few in. You could even top this with a little shredded cheese!
This has officially been added to our weekly menu rotation because it was so easy and completely delicious!
