Last night I went to a Relief Society Enrichment Meeting (ladies church group) and we were asked to bring our favorite holiday treat. I whipped up some of my favorite Peppermint Popcorn, snapped a quick picture for my Instagram (seen below) and tried my hardest not to eat it all. I was semi successful.
I was actually shocked by how many had never had it before! Have you had it? I thought it was a pretty common treat, but I guess I was wrong. So, that’s why I’m posting it today (with a iPhone pic/not the best) in hopes to maybe share this with some of you that haven’t had it either. And with only three ingredients, how could it get easier?!
Peppermint Popcorn

10-12 cups popped popcorn (plain, not buttered)
12 oz. premium white chocolate chips
6-8 candy canes, finely crushed
Place popcorn in a large bowl. In a medium bowl, melt chocolate chips in the microwave for 30-40 seconds, stirring after each 10 seconds, until melted. Stir in 1/2 of the crushed candy canes and immediately pour over popcorn. Stir to coat. Pour out onto a cookie sheet and spread to the edges. Sprinkle with remaining crushed candy canes. Let it “dry” on the counter for 2-4 hours before serving. If you are in a rush, place in the fridge for 1-2 hours.
*You can bring out the sweetness by sprinkling with a little salt once you’ve spread it out on the cookie sheet.
