I recently confessed I am on a berry kick lately. Everything BERRIES! Strawberries, raspberries, blackberries and blueberries. Talking to a few friends it seems like I am not the only one who thinks they are extra sweet this year. Maybe it’s just here in Texas, but I sure hope not!
I’ve been trying to use them in a new way other than just eating them.
We really only drink soda when we eat out. We don’t eat out that often so soda has become a treat for us. For Mother’s Day my husband brought home some of our favorite blueberry soda for me to savor. As I was drinking an ice cold bottle of it, it came to me that I could make it.
I the next day I made a batch for the whole family to share and they loved it! I made it with both Sprite and club soda and I have to say that we enjoyed the club soda version much better. The sprite was too sweet and syrupy with the already sweet blueberry syrup. You could also use sparkling water or sparkling mineral water
Blueberry Soda

Ingredients
1/4 cup Blueberry Syrup per serving
12-16 oz cold club soda or sparkling mineral water
ice
Directions
1. Fill a large glass half with ice.
2. Pour syrup into a large glass.
3. Add in club soda.
4. Gently stir to combine. Don’t over stir then your soda will become flat.
5. Serve immediately.
