My mom very rarely did these two things.

Baked.
And made things from scratch.

With the exception of these Banana Muffins.

The chocolate chips are my addition to this recipe, but it’s the secret the secret ingredient that makes these so soft and fluffy.

My mom made these for me when I was a kid and I’ve now been making them for my boys for 18 years.

“I really wish these muffins were

perfectly shaped.”

I have food friends who make the most gorgeous muffins. They have the best domes and are ultra bakery ready.

But this is why I think my Banana Muffins with Chocolate Chips are absolute perfection.

It’s a recipe my mom used to bake.

And now I make a triple batch of these heavenly muffins every month to keep in my freezer for my boys to enjoy.

All three of my boys beg for

these most Saturday mornings.

All three of them are teenagers so one little order from our fav chicken place doesn’t hold them for long.

So we make these Mini Chicken Breakfast Sandwiches from home now (even on Sundays) and they are just as wonderful as the original.

And I’m saving money this way, too!

People hated me when I first

posted this recipe last summer.

They were a little upset by the cost of the beef.

I get it.

I do.

But what they didn’t realize is that all of this fed my family of 5, TWICE!

3 out of the 5 of us are teenage boys, too, so that’s saying something.

It was around $7.00 a serving, which for us was still cheaper (and better) than any drive through will be.
