I have been kind of feeling like a dippy mood lately. So in honor of that, here are some fun ones you can whip up tonight or this weekend!
Ian could eat this next recipe with a spoon. We first had it over the holidays when my friend Lori made some for a New Years Party. She said she grew up with this fabulous dish and as for Ian and I…we both grew up with bean dip in a can with a side of Fritos. (Don’t get me wrong…it’s okay to be white trash every once in a while as you are scrapping goodness out of that can!) (Is it still okay to use the term, white trash? I hope so!) But once you have this fabulous bean dip, you will not want to go back. Think of it as glamorous bean dip, or high society bean dip!
Bean Dip
1 large can refried beans (or two cans regular size beans) I never know the amounts on those cans!
1 small can chopped chilies
1 small onion finely chopped
8 oz. sour cream
8 oz cream cheese, softened
1 pkg taco seasoning mix
In a large bowl, mix ingredients together until well incorporated. Pour into a 2 quart baking dish. Sprinkle with cheddar cheese. Bake at 350 for 35 minutes or until bubbly and cheese is melted.
