Cowboy Caviar

Cowboy Caviar or Avocado Salsa is pretty much a crowd pleaser! It’s packed full of fresh vegetables like bell peppers, tomatoes, sweet corn, black beans, juicy lime juice and spicy jalapeños if you want! It’s all tossed together with a flavorful dressing and best served with tortilla chips.

Avocado Salsa

I first had Cowboy Caviar at a BBQ with a bunch of family friends. We liked to get together often and one of my best friends brought this for the first time. It was such a hit, we begged her to make for almost every gathering afterwards.

You could certainly serve this along side a taco bar, but we really prefer it with salty tortilla chips. During the summer months, this even makes a great pool side snack or a simple lunch!

How To Make Cowboy Caviar

  • Add corn and black beans to a large bowl. Fresh corn is best, but frozen works, too! Just make sure you thaw it first.
  • Finely chop onion, tomato, bell pepper and cilantro and add to the bowl
  • Toss all of that to combine.
  • Chop the avocados and drizzle 1 tablespoon of lime juice over the top. This helps them not brown.
  • Add this to other vegetables and gently mix in.
  • In a separate bowl whisk dressing ingredients together.
  • If adding in jalapeno pepper, grate it in using a microplane or finely dice with a knife. I like this method best so the spiciness is even distributed.
  • Pour the dressing over dip and gently toss to coat.
  • Chill for 1 hour before serving with tortilla chips.

Ingredients

FOR DIP

  • 2 Cups Corn Fresh or Frozen
  • 1/2 Red Onion Peeled and Diced
  • 14 oz Can Black Beans Rinsed and Drained Well
  • 1 Large Tomato Deseeded And Diced
  • 1 Whole Green Bell Pepper Stem and Seeds Removed Diced
  • 1 Bunch Cilantro Finely Chipped
  • 1/2 Medium Jalapeno Pepper Minced
  • 2 Large Avocados Peeled and Pit Removed and Diced

FOR DRESSING

  • 1/3 Cup Olive Oil
  • 1 tsp White Wine Vinegar
  • 3 TBSP Lime Juice Freshly Squeezed
  • 1 tsp Kosher Salt
  • 1 tsp Granulated Sugar
  • 1/2 tsp Pepper Freshly Cracked
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Chili Powder
