I was out and about recently and popped into Williams-Sonoma for some much needed inspiration. Lately my mind has been reeling with so many fun recipes, but sometimes I need to find my ‘food’ center and window shopping helps clear my mind. It was there that I was inspired to create this refreshing (and shockingly healthy) Ambrosia Smoothie.
With all of the gravy laden holiday meals coming up, I thought it would
be nice to recreate a holiday dish with a healthy flair. So out of my
comfort zone, but I was just drawn to the whole concept. And once I get
something in my mind, I have to do it!
For both Ian and I growing up we always had some sort of fruit salad at Thanksgiving. You know the one…a couple cans of fruit cocktail, bananas, marshmallows, coconut all floating in whipped cream or Cool Whip. Every kid always had a second helping of that!
Because of the fruit ingredients I knew I could come up with an easy and healthy smoothie concoction. And there was no way I was going to try to come a healthier version of mashed potatoes and gravy. Some foods should never be messed with at the holidays!
Are you going to want to make this and serve this along side your turkey and stuffing. Maybe. But hopefully with this recipe you can pass up the sugared fruit salad knowing you can have this smoothie anytime you want!
Ambrosia Smoothie

Serves 2
1 cup coconut milk
1 medium banana, sliced and frozen
2 cups pomegranate juice
Freshly squeezed juice from two medium oranges
1 cup pineapple juice
Blend the above ingredient all together in your blender until frozen banana is smooth.
This turned out slightly frothy and oh so fabulous! My kid actually guzzled this down and I felt totally okay with it!
Alright…if you want to be a little naughty because you feel like your missing out on the real Ambrosia Salad, feel free to top this with a little whipped cream. I won’t tell anyone!
Back to my little shopping trip to Williams-Sonoma…I was in heaven with there gorgeous display for a holiday spread! And don’t get me started on their Hot Chocolates! After making this smoothie, though, I think I’m putting one of these juicers on my Christmas list instead of trying to hand juice anymore!
