This Chicken Artichoke Sandwich needs to be in your monthly menu rotation! Made with simple ingredients like ciabatta rolls, rotisserie chicken, spinach artichoke dip and provolone cheese if you like. And guess what? All the ingredients come from Costco.

Spinach Artichoke Dip

I don’t know anyone who doesn’t love Costco’s Spinach Artichoke Dip. But unless your feeding a crowd, it’s a lot to just eat with crackers. That’s why I love to use in this grilled cheese style sandwich. It adds a depth of flavor and actually heats up really well.

This sandwich uses ciabatta rolls also from Costco. They have a chewy crust on the outside. I like to turn them inside out, essentially, and toast the fluffy insides. You can keep the roll as is, but it has potential to be really tough once it’s toasted.

Ingredients

  • 6 Ciabatta Rolls
  • 2 Cups Spinach Artichoke Dip From Costco
  • 3 Cups Rotisserie Chicken Shredded
  • 12 Slices Provolone Cheese or Mozzarella
  • Butter

Instructions

  • Open each ciabatta roll and place crust side up.
  • Spread each half with spinach dip.
  • Place a slice of cheese on each half.
  • Pile up about 1/2 cup of shredded chicken onto one half.
  • Top each chicken half with with the other side of the roll and press down.
  • Over medium heat, place a little butter into a pan and let it start to melt.
  • Grill one side of the sandwich for 2-3 minutes or until golden and toasty.
  • Before flipping spread butter on the top side of the sandwich.
  • Flip sandwich and toast on the other side for 2-3 minutes.
  • Cheese should be melted. If it is not, remove it from the pan and microwave it for 30-60 seconds.
