Chicken Taquitos are our family’s go to weeknight meal! A super creamy filling made easy with rotisserie chicken, cream cheese, cilantro, lime juice, cumin and chili powder. The mixture is all mixed together then rolled up in fresh flour tortillas. Instead of deep frying them, they are baked to golden perfection with a little sprinkling of kosher salt on top.
During the school year I’m always trying to help my 5:00 pm dinner time self out with super easy recipes. Just like this recipe, my Sesame Chicken is a family favorite. Baked Chicken Taquitos
I typically have a batch of these frozen in my freezer. This is one recipe that most definitely goes into my menu rotation because my entire family loves them. When I have three boys who are taking sports and other afterschool activities, having easy dinner options on hand are super important. Plus, these make really great grab and go snacks that they can eat in the car if we need!
They are super creamy, cheese with the right amount of spices. Rotisserie chicken is the golden star in this recipe. I will always pick one up when I go to the store because I can use it in so many dishes. Quick and easy is the way weeknight dinners should be!

How To Make Homemade Chicken Taquitos
- In a large bowl combine softened cream cheese, enchilada sauce, shredded cheese, chopped cilantro, chopped green onions and lime juice.
- Mix in cumin, chili powder, garlic powder and onion powder until well combined.
- Fold in diced chicken.
- Scoop 2 tablespoons of the filling onto the center of each flour tortilla.
- Take one end of the tortilla and fold it over until it meets the opposite side.
- Tightly pull back on the top fold ever to ensure the filling will be secure then roll up completely.
- Place each taquito seam side down while you are making the rest.
- Preheat oven to 375 degrees.
- Line a baking sheet with parchment paper.
- Place desired amount of taquitos on baking sheet.
- Lightly spray with cooking spray and sprinkle with a little kosher salt.
- Bake for 15-20 minutes until lightly golden brown.

Chicken Taquitos
Ingredients
- 2 Cups Cooked Chicken Breast Diced
- 8 oz Cream Cheese Softened
- 2 Cups Colby Jack Cheese Shredded
- 15 oz Green Enchilada Sauce Mild
- 2 TBSP Fresh Lime Juice
- 1 Bunch Cilantro Finely Chopped
- 4 Green Onions Finely Chopped
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 30 Fajita Size Flour Tortillas
- Cooking Spray
- Kosher Salt
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a large bowl combine softened cream cheese, enchilada sauce, shredded cheese, chopped cilantro, chopped green onions and lime juice.
