All three of my boys beg for these most Saturday mornings. All three of them are teenagers so one little order from our fav chicken place doesn’t hold them for long. So we make these Mini Chicken Breakfast Sandwiches from home now (even on Sundays) and they are just as wonderful as the original. And I’m saving money this way, too! People hated me when I first posted this recipe last summer. They were a little upset by the cost of the beef. I get it. I do. But what they didn’t realize is that all of this fed my family of 5, TWICE! 3 out of the 5 of us are teenage boys, too, so that’s saying something.
