I think it’s my way of cooking a mini Thanksgiving dinner without the cost of a huge turkey and the time in the kitchen. I recently discovered you can cook a whole chicken in the crock pot/ slow cooker. You don’t get that crispy, buttery skin you do when you actually roast it in the oven, but the meat tastes just as wonderful. And it takes no time at all.
You can cook it with any root veggie you want, but I just like mine with just carrots because I like to use the juices for gravy and onions and potatoes change the flavor. You can also cook it without any vegetables. This method would also be great to cook the chicken if you are just needing it for another recipe.
Slow Cooker Whole Chicken

1 whole chicken (5-6 lbs)
3-4 large carrots, peeled and cut into 4-5 pieces
1/2 tsp pepper
1 tsp salt
1 1/2 tsp dried parsley
1/2 tsp paprika
1/2 tsp garlic powder
1 cup water
Place carrots and water into crock pot. Set chicken, breast side up on top of the carrots. Combine pepper, salt, parsley, paprika and garlic powder in a small bowl. Sprinkle mixture over chicken and gently rub in. Place lid on top and cook on high for 2-2 1/2 hours or low for 5 hours. Just make sure your chicken is cooked through before serving. Remove chicken to a plate, lightly cover it with foil and let it rest for 10 minutes before cutting in to.
