Do you remember this post? Well, not that this recipe I am about to share with you is a completely genius idea on my part (as Ian informed me yesterday when I told him the scoop), but it made me laugh. It’s getting close to Valentine’s Day so most everyone has hearts on the mind. When I saw that Reese’s Peanut Butter Cups came in heart shapes I snatched the bag up (I should have bought two) and made a beeline to the check out lane. At the time I was just going to eat and enjoy them a la carte, but then got to thinkin’. They would be perfect on a peanut butter cookie!
We were asked to bring a sweet (no surprises there!) to a family dinner last night so this was the perfect opportunity to whip some up. So I got the kids settled and made a batch. As I was letting them cool, I checked out my blog reader and this was the first blog entry I read…NO LIE! All I can say is great minds think alike! If you haven’t checked out eighteen25 you should. It’s adorable!
‘My Heart Melts For You’ Cookies
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup sugar
1/2 brown sugar
1 whole egg
1 egg yolk
1 tsp vanilla
2 cups flour
1 tsp soda
1/2 tsp salt
3 TBSP sugar
1 {10 oz.} bag Reese’s Peanut Butter Hearts (unwrap about 20)
Preheat oven to 375°. In a medium bowl cream together, butter, peanut butter, 1/2 cup sugar and brown sugar. Mix in eggs and vanilla until well combined. Gently stir in flour, baking soda and salt. Form dough into 2 inch balls and roll in 3 TBSP sugar. Place then on a cookie sheet about 2 inches apart. Bake for 6 minutes. Remove from the oven and immediately press one heart into the center of the cookie. Bake for exactly one more minute. (The heart will still keep it’s shape.) Let them cool completely before serving.
