I recently got a hand-me-down waffle maker {to tide me over until I can buy this little momma!} I have tried two different waffle recipes so far and this one is my favorite of the two. Of course I altered mine a bit because I just discovered that chocolate chips are marvelous in waffles! And if you pour maple syrup over them, it’s tastes like you are eating a chocolate chip cookie for breakfast! Who would have thought it took me this long to figure out? But, by all means omit the chocolate chips if you aren’t in the mood.
Chocolate Chip Waffles
1 3/4 cup flour
1 TBSP sugar
1 TBSP baking powder
1/2 tsp salt
1 cup plus 3 TBSP milk
3 large eggs
1 tsp vanilla
1/2 cup (1 stick) butter, melted and cooled
1/2 cup sour cream
1 cup chocolate chips
Heat your waffle iron. In a large bowl whisk together flour, sugar, baking powder and salt. In a medium bowl whisk together milk, eggs, vanilla and butter. Pour milk mixture into flour mixture and stir to combine. Gently fold in sour cream to combine. There will be lumps. Lightly oil grids with spray. Pour half allowed batter amount (every iron is different) into waffle iron, quickly sprinkle with a few chocolate chips and top with the other half of allowed batter. Close iron and cook until golden brown. about 2-3 minutes.
