Mini Chicken Breakfast Sandwiches

Mini Chicken Breakfast Sandwiches are Easy to make at home anytime you want! Only 3 ingredients to your favorite miniature chicken sandwiches we all know and love!

I love a good copy cat recipe. My very first pin I ever shared on Pinterest was for my Nuggets recipe. It went so viral that I got a personal email from one of the founders that his girlfriend love my recipe! These Jack Jack Cookie Num Nums may just be better than the original. And I do have confirmation from mulitple people that they prefer my version of the famous Peppermint Chip Shake.

When I discovered this little trick, I haven’t looked back! Yes, we still order these whenever we go out to a certain establishment if we happen to get there before 10:30 am Monday through Saturday.

They are still some of our favorites!

But sometimes I like to be the cool mom and make these at home! You only need three ingredients so grab them the next time you are out and about.

You can find the rolls in most grocery stores in the frozen bread section.

My Costco carries the Just Bare Chicken Nuggets and my boys LOVE them!

I’ll let you know right now before you scroll any further. I wrote the recipe using one pan of the frozen rolls. For me that would be a waste of time just to bake up one batch because I have 3 teenage boys who are HUNGRY in the morning. And the afternoon and evening, too!

I also made the serving the same as the restaurant. But I don’t know anyone who can only just eat 4. Bust out your math skills and decided how many you want everyone to have and buy accordingly. If you make more than 2 pans, I would double the honey and water ratio.

How To Make Homemade Copycat Chicken Minis

  • Remove rolls from the plastic packaging and cover lightly with foil.
  • Bake at 325 degrees for 15 minutes or until warm in the center.
  • Airfry chicken nuggets at 350 degrees for 10 minutes or until lightly golden brown and crispy.
  • If baking nuggets, bake at 424 degrees for 15-25 minutes until lightly golden brown and crispy. *See notes below.
  • In a small bowl pour in honey and water. Microwave for 30 seconds and stir together.
  • With a pastry brush, brush honey glaze over the top of the fresh rolls.
  • The rolls will have a fold in the middle so open them up and place one chicken nugget in each of them.
  • Serve hot!
  • If you are only using an oven then place the nuggets in the oven while the rolls are heating through.  Remove the rolls when they are done and turn up the heat to 425 degrees.  Cook an additional 5-7 minutes until golden and crispy.  
  • If you want your bread to be soft just like they are at our favorite Chicken place, then once you have assembled them, cover with foil again and let them sit for 5 minutes.  The steam from the rolls and chicken will soften them up.  This step is not necessary.

  • 1 pkg Sister Schubert Bake and Serve Parker House Rolls 16 Count
  • 16 pieces Just Bare Lightly Breaded Chicken Breast Chunks
  • 2 TBSP Honey
  • 1 TBSP Water
