Pomegranate Salad Dressing is made with just 5 ingredients. Pomegranate juice, honey, mustard, olive oil and balsamic vinegar. This recipe is a little tart with a hint of sweetness! Blend it all together and pour over any salad. I especially love it over my Pomegranate Avocado Salad.
For a while I’ve focused on only sweet recipes, but have gotten back to sharing dinner ideas, sides and salads again. My boys really love Sesame Chicken. Another kid friendly meal is my Instant Pot BBQ Chicken Sliders. If you’re looking for another salad recipe my Shredded Brussel Sprouts and Pecan Salad is a crowd pleaser!
Easy Salad Dressing
Back in the day I was a huge Martha Stewart fan. We are talking when I was in high school I had used my own money to subscribe to her magazine for years. I watched every episode of Martha Stewart Living and loved watching more of her on The Martha Stewart Show.
In one episode she talked about how she ate a pomegranate every morning. Up to that point I had never even tried one, but now I was obsessed with trying it.
I’ll be honest. I wasn’t a fan at first. Over the years, though, I have fallen in love with those little arils and try to eat or drink it whenever I can.
This Pomegranate Salad Dressing is perfectly in sync with a bit of tartness and a hint of sweetness. It’s only 5 ingredients (salt and pepper not included) and truly only takes minutes to make.
You certainly can juice your own pomegranate, but that is A LOT of work. I like to buy POM juice that you can easily find in the refrigerated produce section at your local grocery store.
I made this dressing with my Pomegranate Avocado Salad in mind, but I have no doubt this would be wonderful over any salad!
How To Make Salad Dressing
- In a blender combine olive oil, pomegranate juice, spicy brown mustard, honey, balsamic vinegar, salt and pepper and blend on high for 1 minute.
- The mixture will start to get creamy and thicker.
- If you don’t have a blender you can combine all the ingredients in a quart size mason jar.
- Place the lid tightly on top and vigorously shake for 1 minute or until dressing is creamy.
- Store in the refrigerator for up to 1 week in an airtight container.
If you’ve ever wanted to try pomegranate now is the time! You don’t have to eat one every morning like Martha Stewart, but it is pretty great on it’s own or in a salad!
